The culinary heritage of Rajasthan has always attracted food lovers and adventurers. From hot curries and tangy chutneys to bustling street food, Rajasthani cuisine never fails to impress.

Jodhpur, the Blue City of India and the second largest city in Rajasthan, is known for its tradition and architecture. The city, which is known for its forts, palaces, temples, Havelis, and even residences built in vibrant blue, is also known for its traditional cooking, which adds flavor to city life. Jodhpur's famous 'Mirchi Vada' and Mava Kachori is one of the best foods.


1. Mawa Kachori

Mawa Kachori is beyond all prejudice, one crunchy taste at a time. As you might expect, this wickedly sweet delight is filled with mawa and almonds and dipped in sugar syrup. It may or may not be adorned with nuts and aromatic spices. Apart from Rajasthan, Mawa Kachori is available in Mitthan Bhandar or Mitthan Bhandar all over North India including Haryana and Delhi. You can also think of these kachoris as a type of sweet, fluffy pastry.

Ingredients of Mawa Kachori

  • 600 gms maida
  • 120 gms ghee
  • 200 ml water
  • 220 gms sweet mawa
  • Ghee (for frying)
  • 20 gms almond (without skin), chopped
  • 15 gms pista (without skin), chopped
  • A pinch of saffron
  • 1 kg sugar

How to make Mawa Kachori...

  1. Knead the dough with ghee and water and keep it for 30 minutes.
  2. Divide it into balls and stuffing and place it in the center of the mawa and flatten it to make a disc.
  3. Fry in ghee till full golden brown.
  4. Keep making sugar syrup by heating water and sugar till the sugar dissolves completely.
  5. Dip the fried kachoris in syrup and garnish with chopped dry fruits before serving.

2. Mirchi Wada

    Mirchi bajji (Mirchi cutlets) or Mirchi Vada is a spicy jodhpurs dish made of batter and chili (Mirchi) and potato or cauliflower stuffing, which is fried in oil, and served with tomato sauce or sometimes mint and tamarind chutney. It can also be eaten hot as well. Mirchi is made from Bada Banana Chili. Mirchi Bada of Jodhpur, Rajasthan is famous because the water of that place gives it a different taste. Hence it goes well with Mawa Kachori, a special food of Jodhpur which is dipped in sugar syrup.

    Ingredients of Mirchi Vada

    • 15-20 Large green peppers
    • 1.5 cups besan (chickpea flour)
    • Salt – 1 tsp or to taste
    • Water (to mix the full batter)
    • Oil (for full deep frying)
    • For the filling:
    • 350 gms potatoes (peeled and mashed), boiled 
    • 2 tsp salt
    • 3 tsp aamchoor (dried mango powder)
    • 2.5 tsp coriander powder
    • 1 tsp chilli powder
    • 1/4 tsp asafoetida
    • 2 tsp green chillis (chopped)
    • 3 tsp saunf (fennel seeds, crushed)
    • 1/4 tsp Turmeric powder 

    How to make Mirchi Wada

    Prepare  the full filling:

    • Mix potatoes, salt, red chili powder, mango powder, coriander powder, asafoetida, Turmeric powder, and green chilies together.

    Prepare the full vada:

    • Wash and wipe the peppers, slit lengthwise, and all de-seed.
    • Fill with the full potato filling.
    • Add salt and enough water to the gram flour to make a thick, smooth paste.
    • Heat the oil until a drop of the solution comes up immediately.
    • Dip black pepper in the batter and put it in hot oil.
    • Reduce the heat to medium and fry till golden.
    • Take it out on an absorbent paper before serving.

    Time – 40 minutes
